Carrier Takeoff
Launch the mission  
Pause the sim P
Lower Gear G
Flaps Full F8
Set Trim UP  
Throttle FULL  
Un-Pause sim P
Adjust Pitch with joystick for a slight climb  
Raise Gear G
Raise Flaps by stages F6
Adjust Trim  


 

Mike Eustace and Doug Attrell explain why it is necessary to pause the sim and activate the gear before taking off:

"The gear phenomenon is a little internal flaw caused by the way CFS works, and unfortunately this impinges on the behaviour of your gear during the rest of the mission - i.e: it doesn't function. This could be pretty serious during the Carrier landing stage as you might well imagine, but the benevolent part of the phenomenon is that if your gear isn't functioning when you start on the Carrier, then you don't need it functioning in order to land either - you land perfectly well without it."
